6 Chicken Breasts, 3/4 cup Lime Juice, 1 tsp Cumin, 2 T. Olive Oil, 1 cup sliced Onion, 1/3 cup Salsa Verde (green salsa), chopped Cilantro, 4 cups Spinach, 1/4 cup Chicken broth, 1 tsp. Garlic Powder, 4 tsp. Sour Cream, Salt & Pepper

Make marinade of lime juice, cumin and garllic. Add chicken. Marinade for 1/2 hour. In skillet heat the olive oil. Add the chicken. Brown on both sides, add onions. Add the marinade juices and the chicken broth. Reduce to about half. Stir in the spinach. Cook just until spinach wilts. Stir in the salsa verde. Heat through. Serve over cooked rice. Grnish with sour cream and fresh cilantro.
