"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Shirley's Bean Soup, by Grandma, is from The Clausing Family Cookbook,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
1 ham bone, or cut-up ham 1 c. tomato juice 3 qts. water 3 carrots, cut fine 1 lb. navy beans (dry) 3 sm. potaoes, diced 1 lg. onion 2 tsp. salt 1 c. chopped celery 1/2 tsp. pepper
Cook ham bone in water for 2 hours and remove bone. If no bone is available use cut-up ham and cook altogether. (I have also used a browned and cut-up smoked sausage. LW) . Add the rest of the ingredients and cook for 2 more hours. Mash if desired. That gives it the classic Bean Soup consistency.
