Mother's Blitz Torte Recipe

1/2 c. coconut
6 eggs
3/4 c. oleo
1 c. milk
2 1/4 c. sugar, divided
2 egg yolks
7-8 TB. milk
2 TB. flour
1 1/4 tsp. vanilla
1/4 c. sugar
3 tsp. baking powder
1 TB. butter
1 1/2 c. cake flour
1 tsp. vanilla
3/4 tsp. cream of tartar
1 sm. can crushed pineapple, drained

Separate eggs. Beat yolks til light and thick and lemon-colored, cream butter, add 3/4 cup sugar and beat. Add beaten egg yolks, add milk and vanilla. Fold in flour, baking powder, and baking soda. Turn into 2 greased and floured 8 or 9 in. round pans. Beat egg white till frothy. Add cream of tartar and beat until stiff and dry. Gradually beat in 1 1/2 c. of sugar. Spread over each unbaked layer. Put the meringue in the center of pans, not too close to edge or it will bake over the pan. Sprinkle with coconut. Bake in a 325 oven 45-50 minutes. Prepare filling: Mix flour and sugar. Add slightly beaten egg yolks and milk. Cook over low heat till thick, stirring constantly. Cool and add pineapple, butter and vanilla. When the cakes are done, let cool and remove from pan. Place cake coconut side DOWN on cake plate, spread filling on top then place second layer coconut side UP on top. If you have any questions about this cake you will have to talk to Grandma cuz I don't think anyone has ever made it but her.

This is a cake that Grandpa's mother (Great Grandma Clausing) always made for Great Grandpa Clausing's birthday. Grandma made it sometimes for Grandpa's birthday too!
