1 lb. Crab Meat, 2 T. Olive Oil, 2 cups chopped Sweet Onion, 1 cup Mushrooms, 2 cups Sour Cream, 5 Anaheim Green Chiles (chared and peeled), 1-7 oz. can Salsa Verde(such as Herdez), 1/3 cup grated Cotija Cheese(a white mexican cheese), 1/2 tsp. Red Chile Powder, 12 oz. Grated Monterey Jack,12 Flour Tortillas, 1 Avocado

Cut tortillas into quarters. Place a layer of them over the bottom of a 9 X 13 pan (that has been pam'd). Spread on about 1/2 of the onions, mushrooms, crab, sour cream, and the grated cotija cheese.Put half of the chiles on top. Put 1/2 the herdez sauce that has had the chile powder added to it, over that. Put another layer of tortillas and repeat the filling ingredients, the remaining chiles,then the sauce, the cotija cheese. Top with the monterey cheese. Bake for 25 minutes. Garnish with fresh sliced Avocado and Cotija Cheese.
