Filling: 1 cup ground Raisins, 1 cup Sugar, 1 cup Water, 1 tsp. Cinnamon, 1/4 tsp. each of Allspice, Cloves, & Nutmeg, Cookie dough: 1 cup Butter, 2 cups Sugar, 3 Eggs, 1 tsp. Vanilla, 5 cups Flour, 1 tsp each Baking Soda & Powder, 1/2 tsp. Salt, 1/4 tsp. Nutmeg, 1/2 cup Buttermilk

Put filling ingredients in saucepan and boil for 5 minutes. Then thicken with 1 T. Cornstarch that has been mixed with a little water. Set aside and let cool. For dough cream together, butter, sugar, eggs and vanilla. Mix together dry ingredients, add to cream mixture alternating with buttermilk. Roll dough out on floured surface and cut with round biscut cutter. Put one layer of cookies on greased cookie sheet, put 1 T. filling in center of cookie. Put another cookie on top and seal around the edges. Cook in 375º oven for about 12 minutes.
