2 bags pink beans, soaked in water overnight
2 lg. yellow onions
4 cloves of garlic
5 lg. carrots, peeled and sliced in bite sized chunks
2 bay leaves
2 cans diced tomatoes in juice
1 can tomato sauce
1 lg. can of chicken stock
1 packaged of Italian sausage
1 - 2 T cumin
1 T chili powder
1 lg. pinch of oregano
salt & pepper

Directions:
Directions:
Drain the soaked beans and put them in a large Dutch oven or crock pot. Add the onion, carrot, bay leaves, garlic, sausage, tomatoes, tomato sauce, chicken stock, and spices. Cook on low for 5 - 7 hours.
