2 C whole kernel corn, canned
or fresh, drained
1/4 C onions, finely chopped (optional)
1 C milk
1 egg, beaten
1 1/2 C flour
2 tsp baking powder
3/4 tsp salt
3 C Texas Red or Original San Antonio Chili

Directions:
Directions:
Combine corn, milk, and onion in a bowl with a beaten egg.

Combine flour, salt, and baking powder in a separate bowl.
Add corn mixture and mix just enough to moisten.

Drop by quarter cupfuls onto a greased griddle and fry until golden brown on both sides.

Heat chili and serve with corn cakes.
