5 lbs potatoes
1lb cheddar cheese*
1 16 oz carton of sour cream
1 small can Ortega diced green chilies

Momís (Aunt Geriís) Chile Potatoes

5 lbs potatoes
1lb cheddar cheese*
1 16 oz carton of sour cream
1 small can Ortega diced green chilies

Cook potatoes until firm, let cool then peel off skin.
Grate potatoes and cheese.
Mix in sour cream and green chilies.
Bake uncovered in 9X13 baking pan for 30 minutes at 350 degrees. Serves 8

*Optional: 1 cup extra shredded cheese for on top of casserole last 5 minutes.

In a hurry? Substitute 1 1/2 bags frozen hash browns for the potatoesÖ.takes less time to make.

Mom used to make these potatoes when we had 'family' dinners....they are wonderful....I have made them for years too, but now I use frozen hash browns...so much faster and easier!
