2-3 med. onions, chopped
4 cups water
4 cups potatoes, diced
2 stalks celery, diced
1 (20 oz.) can mixed vegetables
2 cans cream of chicken soup
1 lb. Velveeta cheese
1 can evaporated milk
salt and pepper to taste

Directions:
Directions:
Cook potatoes, onion and celery in water. Do not drain. Add remaining ingredients. Cook on low heat, stirring frequently to prevent cheese from burning.
