1 cup sugar
1/2 cup shortning
2 eggs
1 cup apples, chopped small
1/2 tsp. vanilla
1 1/2 TB buttermilk
1/4 tsp. cinnamon
2 cups flour
1/2 tsp. salt
1 tsp baking soda
1 cup pecans, chopped


1 tsp. cinnamon
3 tbsp. sugar

Cream sugar, shortening, eggs and apples. Sift together dry ingredients and add to creamed mixture. Add vanilla and buttermilk. Blend well. Add pecans. Pour into greased loaf pan. Sprinkle cinnamon and sugar mixture over top. Bake at 350 for 50-60 min. or until test done in center.
