1 pie crust(freshly made or a frozen one thawed out), 1 cup finely chopped Artichoke Hearts(not Marinated), 1/2 cup Cream Cheese, 1 tsp. Lemon Juice, 1/2 cup Parmesan Cheese,

Directions:
Roll out pie crust pretty thin. Cut into a 1 1/2 inch round circle. Fit into a mini muffin pan. Punch down into the muffin pan so the crust covers the bottom and goes up the sides. Mix the rest of the ingredients and fill muffin tin 3/4 full. Bake in a 350º oven for about 12 minutes or until the centers are bubbly.
