2 whole chickens
5 large boxes of chicken broth
1 yellow onion
3-5 stalk celery
3-5 large carrots
sprinkling of basil
salt to taste

Directions:
Directions:
Place chicken in 15-20 qt. pot. Add chicken broth and basil. Turn burner to low. Chop up onion, celery, and carrots to desired size and add to pot. Add about 2 tbsp. salt. Simmer for 4-5 hours or until chicken begins to fall apart. (For best taste, keep the broth from reaching a rolling boil). Remove chicken and vegetables and strain chicken broth through cheesecloth into another large pot to remove cooked blood.
Clean chicken and tear into bite size pieces and return to broth. Return desired amount of vegetables.
In a separate pot bring water to a boil and cook desired type of noodles.

Freezes really well, but I have found it is best to cook fresh noodles instead of freezing them within the soup.
