Nana's Irish Stew Recipe

2 lbs. good stew beef
1 large sweet onion
6 large carrots
1 bunch celery
5 large potatoes
6 c. beef broth
flour
1 bay leaf
1/2 t. thyme
salt & pepper
butter

Directions:
Directions:
Dredge beef pieces in flour and brown in 4 T. butter in saute pan. Add to stew pot and cover with liquid. Chop and add carrots, celery, onion to broth. Add bay leaf and thyme and cover. In separate pot place chopped potatoes and cook until they're fork tender. Add most to the pot and reserve about 1/2 cup to puree. Add puree potato to pot to thicken. Add 4 T of butter and cover. Taste for salt and pepper.

This can be done in the crock pot. Nana also took out some of the broth and added butter and flour, whisked together and back into the pot to thicken the stew if it was too watery. Delicious.
