1 lb. pecan halves 1 egg white 1 tsp. cinnamon 1 cup sugar 1 TB water 1 tsp. salt
Beat egg white and water till fluffy, not stiff. Mix in pecans and coat well. Mix sugar, salt and cinnamon, then add to pecan mixture. Stir till coated well. Spread out on cookie sheet and bake at 300º for 20-30 min. Stir every 10 min. Remove from pan immediately to prevent burning and sticking.
