3 eggs
2 cups sugar
1 cup oil
2 tsp. vanilla
3 cups flour
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
3 cups grated zucchini
1 cup raisins (optional)
1 cup chopped nuts.

Directions:
Directions:
Mix eggs, sugar, oil and vanilla. Sift flour and dry ingredients. Add zucchini to egg mixture. Add flour mixture. Add nuts and raisins. Bake at 350 for 1 hour or until test done in center.
