Cake:

1 1/3 c. sugar
2 eggs, separated
1 tsp. baking soda
1 tsp. baking powder
1/4 tsp. salt
1/3 c. oil
1 tsp. vanilla
1/2 c. mashed bananas
2/3 c. buttermilk
2 c. flour


Icing:

3 T. flour
1/8 tsp. salt
1 c. milk
1 tsp. vanilla
1/2 c. butter
1/4 c. Crisco
1 c. sugar

Directions:
Directions:
Cake: Beat 2 egg whites until stiff and add 1/3 c. sugar. Mix together remaining cake ingredients (including egg yolks) and fold in beaten egg white mixture. Bake in a greased, wax paper lined, floured 10x15" jelly roll cake pan (2 pans can be used). Bake for 15-20 minutes. When cool, take off wax paper.

Icing: Cook until thick: flour, salt, milk and vanilla. (I put it in the micro at 1 minute intervals, stirring between, until thick.) Cool. Beat butter, Crisco and sugar. Add cooled flour mixture. Beat vigorously. Fill the 2 baked cakes.
