1/2kg Ricotta Cheese
250g Spinach (roughly chopped and boiled)
1 Egg
Salt and Pepper

1 packet Large Shell Pasta
Onion
Garlic
Bay Leaf
Tin Diced Tomatoes
Milk
1 Egg

Directions:
Directions:
Combine Ricotta, Spinach, Egg and salt and pepper together. Stuff mixture inside uncooked pasta and place pieces in a glass baking dish closely together . Fry chopped onion and garlic and add tin of tomatoes and bay leaf. Simmer gently for a few minutes – remove bay leaf. Pour tomato mix over pasta. Gently whisk milk and egg and pour around the sides of the pasta. Leave to soak overnight. Top with grated cheese and cook 150 degrees for 1 hour.

Alternative:
Stuff pasta with ricotta mix and cook whole in boiling water. Cook tomato mixture and serve together.
