2 Pillsbury 9 Inch Deep Dish Pie Crust or Make Your Own

Pie Crust:
1 Cup of Cold Shortening
3 Cups of Flour
1 Tablespoon Salt
1/2 Cup Cold Water

Filling:
1 Cup of Flour
2 Sticks of Butter
2 Medium Onions, Chopped
1 Medium Bell Pepper, Chopped
1 Cloves of Garlic, Minced
1 Pound of Crawfish Tails
Salt, Pepper and Cayenne to Taste!!!!

Directions:
To make crust-Cut shortening into dry ingredients and mix to size of small peas, Add water with fork until dough leaves side of bowl. Handle as little as possible. It is easier to buy the dough, unless you really want to be Bettey Crocker!!!!! For filling-Make roux with 1 cup flour and 2 sticks of butter, cooking until golden brown. Add onions, pepper, garlic and crawfish and cook 10-15 minutes. Add seasoning and stir. Spoon filing into dough, cover with second pie crust, with fork pierce top of pie to vent and bake 425º for 40 minutes or until crust is golden brown.
