GRANOLA PARFAITS

3-1/2 c. old fashioned or rolled oats,
1/2 c. raw, unsalted sunflower seeds,
1/2 c. chopped pecans,
1/8-1/4 tsp. cinnamon,
1/4 c. canola oil,
1/4 c. honey

2 c. fresh fruit,
2 c. lowfat vanilla yogurt (or no-fat plain yogurt sweetened with 1 T. honey)

Mix dry ingredients in a med. mixing bowl. In a separate measuring cup, mix honey and oil together. Add mixed honey and oil to dry ingredients and mix thoroughly. Spread on a cookie sheet (with sides.) Bake in preheated oven at 250-275º for 20 mins or until golden brown, stirring every 5-7 mins.

Cool completely; store in closed container.

To serve: In individual parfait glasses, alternately layer 1 heaping T. yogurt, then 1T. fruit, then 1T. granola. Repeat and garnish with fresh mint or small edible flower. Or just heap it all in a cereal bowl or enjoy as a dry snack!
