1/2 cup freshly squeezed lime juice
1/4 cup olive oil
2 t. honey
1 tsp. salt
1/4 tsp. cayenne pepper
4 boneless skinless chicken breasts or thighs
1 ripe avocado, pitted peeled and sliced
1 cup grape or cherry tomatoes, halved
1/2 cup peeled, seeded and chopped cucumber
1/4 cup chopped fresh basil or 2 T. dried

Directions:

In a small bowl whisk together lime juice, olive oil, honey, salt and cayenne pepper. Pour half of mixture over chicken in a resealable plastic bag. Save the remaining mixture for later use. Seal bag with chicken, place in refrigerator for at least 1 hour.
Heat grill to medium. Remove chicken from bag and place on grill, discarding marinade and bag. Cover grill and cook 8 - 10 minutes on each side until tender and no longer pink. Chop in to 1/2 to 1 inch pieces. Combine chicken pieces with avocado, tomatoes, cucumber and basil in a large bowl. Toss with reserved lime mixture and serve.
