Margaret’s Mussels with white wine


INGREDIENTS
2 kg black mussels
20g butter
1 clove of garlic
1 large onion, chopped
½ a bottle white wine
½ bunch Italian parsley

Directions:
Directions:
Clean the mussels by scrubbing well and removing their "beards". Discard any mussels that are open.

Melt butter in a large high sided frying pan. Add onion and cook over low heat until soft and golden. Add wine and mussels. Cover with a lid and cook over high heat, shaking the pan regularly for about 5 minutes or until mussels open. Divide the mussels and their broth into bowls. Season with cracked pepper and garnish with parsley.
Serve with crusty bread.
