1 Standing Rib of Beef
Sea Salt (Flaky or Kosher is best)
Coarse cracked pepper corns

Preheat oven to 450º

Rub beef with olive oil, coat with salt and cracked pepper

Place in roasting pan on rack, put in center of oven.

Bake for 20 minutes, reduce heat to 350, and roast to a temp of 110º on an instant read thermometer -- about 45 minutes more for a small boneless 2 rib roast, almost 2 hours for a large 4 rib bone in roast. Remove roast and let stand for 30 minutes while you make gravy, etc. The temp will rise, cooking on stored heat, to almost 130º giving you a nice medium rare....
