2 T sugar
1 t salt
3 c buttermilk
2 T butter, melted
2 eggs, well-beaten

Directions:

Sift dry ingredients together, add buttermilk, and stir lightly. Add butter and fold in eggs. Mix thoroughly. Batter should be a little bit lumpy and slightly runny.
Cook on a hot, ungreased griddle.

For those who aren't crazy about pancakes (like me), try these. They are thin and soft, like crepes and are incredibly good. My grandma used to make dozens of them on a hot wood stove and we'd polish 'em off every time. Make sure to eat with maple syrup if you have it. Bon appetit!
