2 tbsp. raspberry vinegar or white vinegar
1 tbsp. apple juice
2 tsp. olive oil
1/8 tsp. freshly ground black pepper
1 clove garlic, minced
dash salt
2 cups loosely packed torn mixed greens
1/2 medium cucumber, peeled, seeded and cut into strips
1/4 cup fresh/frozen unsweetened raspberries, thawed
1/2 tsp. fresh dill weed or 1/4 tsp. dried dill weed

Directions:

1. In small bowl, combine first 6 ingredients; blend well with wire whisk.
2. Just before serving, place lettuce mixture in medium bowl or on 2 individual salad plates. Decoratively arrange cucumber strips and raspberries over greens; sprinkle with dill. Drizzle dressing over salad.
