1 c. butter or margarine - softened
1 c. firmly packed light brown sugar
1 c. granulated sugar
2 large eggs
2 tsp. vanilla extract
3 c. all purpose baking flour
1 tsp. baking soda
1 tsp. salt
1 1/2 c. uncooked regular oats
2 c. (12 ounces) white chocolate morsels
1 c. coarsely chopped pecans (if desired)

1. Beat butter at medium speed with an electric mixer until creamy. Gradually add sugars, beating well. Add eggs, one at a time, beating just until the yellow disappears after each addition. Stir in vanilla.
2. Combine flour, baking soda and salt. Gradually add to butter mixture, beating until blended. Stir in oats, white chocolate chips and pecans. Drop by tablespoonfuls onto greased baking sheets.
3. Bake at 350F for 12 minutes. Cool on baking sheets for 3 minutes, then remove to wire racks to cool completely.
