1/2 cup all purpose flour
1/2 tsp baking powder
1 cup creamy peanut butter
1/4 cup unsalted butter ( at room temperature)
3/4 cup sugar
1/4 cup brown sugar1 lg egg
3 T strawberry jelly
6 T confectioners sugar
1-1/2 T whole milk

Preheat oven to 350º. In a small bowl stir together the flour and baking powder and set aside. In a larger bowl blend 3/4 cup of the peanut butter with the butter on medium speed. Add the sugar and brown sugar and beat until smooth. Beat in the egg until mixed well. Stir in the flour mixture until just combined. Using a small scoop or a tablespoon drop dough 2" apart on un-greased baking sheets. Using your thumb gently dent the center of each cookie. Spoon about 1/2 tsp of jelly into each center. Bake lightly golden, about 12 mins. Remove to a rack and cool. In a small bowl beat together the remaining 1/4 cup peanut butter and the confectioners' sugar. Whisk in the milk a little at a time until frosting reaches a good consistency for piping. Using a resealable sandwich bag with a corner snipped off, pipe the frosting over the cookies. ENJOY :)
