1 eggplant
Beaten egg
Bread crumbs
Prepared spaghetti sauce
1/3 c. Parmesan cheese
Shredded mozzarella cheese

Directions:
Directions:
Peel eggplant and slice crosswise 1/2 in. thick. Dip in egg, then bread crumbs. Cook in hot oil 3 minutes each side until golden brown. Sprinkle with Parmesan cheese and serve. OR: prepare as before. After they are browned place in single layer in baking dish; sprinkle with the 1/3 cup of parmesan cheese; then cover with prepared spaghetti sauce; then sprinkle with mozzarella cheese. Bake at 400º 10 - 12 minutes. Serve.
