"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Crazy Sweet Potato Concoction, by Kelly Martin, is from The Clausing Family Cookbook,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
2 lg. yams or sweet potatoes-peeled and chunked olive oil lots of fresh spinach garlic (opt.) your favorite cheese-cheddar, Havarti, Gouda-shredded
Saute potatoes in olive oil until soft-about 10 minutes. Turn off the heat. Heap spinach onto potatoes-cover and let it wilt. Sprinkle cheese onto spinach-cover and let it melt. Enjoy!
This recipe sounds strange, but tastes great. I made it for Thanksgiving 2008 and everyone was happy (though none of us like the more traditional marshmallow casserole). I'd call this a super food cause it's super healthy!
