2 lg. yams or sweet potatoes-peeled and chunked
olive oil
lots of fresh spinach
garlic (opt.)
your favorite cheese-cheddar, Havarti, Gouda-shredded

Directions:
Directions:
Saute potatoes in olive oil until soft-about 10 minutes. Turn off the heat. Heap spinach onto potatoes-cover and let it wilt. Sprinkle cheese onto spinach-cover and let it melt. Enjoy!

This recipe sounds strange, but tastes great. I made it for Thanksgiving 2008 and everyone was happy (though none of us like the more traditional marshmallow casserole). I'd call this a super food cause it's super healthy!
