2 c. chicken broth
Optional:
flour
sweet pepper slices
salt & pepper
fresh spinach
4 chicken breasts
scallions
1-16 oz. stewed tomatoes

Directions:
Directions:
Pour 1/2 c broth into a wide bowl. Mix some flour with salt and pepper. Dip each breast in broth and then coat with flour mixture. Spray a skillet with non-stick, cook chicken over medium heat, turning until brown on both sides. Remove chicken and set aside. Add any remaining flour to skillet and brown it, stirring constantly. Slowly stir in broth and cook until thick. Add tomatoes (peppers, spinach and scallions too) and bring to a boil. Reduce heat to low. Return chicken to skillet and simmer about 10 minutes.

This recipe is sentimental because it's one I made a lot in college. Serve it on your favorite grain or pasta-rice, quinoa, barley, millet.
