* 1 cup fresh white cheese or puréed cottage cheese
* 1/4 cup heavy cream or crème fraîche
* 1 tbsp white wine
* olive oil
* 1 to 2 garlic cloves, minced
* 1 to 2 small shallots, minced (optional)
* 1 to 2 Tbsps chopped parsley
* 1 to 2 Tbsps chopped chives
* salt and pepper to season

1. Cream the cheese and stir through the cream to yogurt consistency. Stir in everything else, and season the mixture to taste. Use as a dip or spread.
