Ingredients:  

* 2 cups diced mango
* 1/2 cup diced onion
* 1/3 cup raisins
* 1/2 cup light brown sugar, packed
* 3 Tbsps white vinegar
* 1 tbsp finely grated fresh ginger
* 1 tsp ground cumin
* 1/2 tsp ground cinnamon
* 1/2 tsp celery salt
* 3 Tbsp finely chopped fresh mint
* zest of 1 orange

Directions:

1. Combine all ingredients in a saucepot and simmer until onions are tender, and liquid has evaporated. Remove from heat, stir in mint, cool then chill until ready to serve.
