Roasted Garlic

* 1 x head garlic
* a drizzle of olive oil
* 1 sprig thyme
* salt and freshly ground pepper

Artichoke Spread with Roasted Garlic, Parmesan and Lemon

* 150 g cream cheese
* 1 cup canned artichokes - chopped
* 1/2 cup sour cream
* 1/2 cup mayonnaise
* 1 bulb roasted garlic
* 1/4 cup parmesan – finely grated
* 2 tbsp parsley – finely chopped
* 1 tsp lemon zest – finely chopped
* 1 tsp hot sauce
* Salt and freshly ground pepper to taste

1. Begin by cutting the top of the garlic bulb off so that the cloves are just visible. Place the bulb, cut side up, onto a piece of aluminum foil. Drizzle with olive oil and season well with salt and pepper. Place the sprig of thyme over top and then wrap the foil up tightly. Place the package into the oven at 350 degrees for about 30 minutes, or until the garlic is golden brown and soft throughout.


1. Begin by mixing the cream cheese in a large bowl until it softens slightly. Add all the other ingredients, including the roasted garlic, and mix until well combined. Lastly, season to taste with salt and freshly ground pepper.
