4-6 chicken thighs
1 tsp. seasoned salt
2 T. olive oil
1 onion, chopped
1 bell pepper, chopped
3 cloves garlic, minced
1 can stewed tomatoes, undrained
1 bay leaf

Directions:
Directions:
Sprinkle seasoned salt on chicken thighs. In a large skillet, brown chicken in olive oil until skin is crispy. Remove chicken, add onion, bell pepper and garlic. Saute until onion is transparent, adding a little water if onions and peppers start to stick. Add tomatoes and bay leaf, lower to simmer and cook for one hour. Add more water if necessary so that chicken is swimming in a stew-like broth. Serve chicken in a platter with onions/peppers/tomatoes and juice on top.
