olive oil or butter
tomatoes
zucchini
oregano
onion
salt & pepper
green pepper
mozzarella cheese

Directions:
Directions:
Peel and thinly slice zucchini. Rough chop onions, green pepper, and tomatoes. Saute' zucchini, onion and peppers in a little olive oil or butter until almost tender, add salt and pepper to taste, then add tomatoes and oregano. Saute' a little longer til veggies are nice and tender. Sprinkle with shredded Motzerella cheese and cook until cheese is melted. Serve. Enjoy.

So good almost every night in the summer. Can use any variety of peppers you like, I even add a jalepeno pepper. YUM! YUM!
