1 pound bacon, chopped
1 green pepper, chopped
1 large onion, chopped
1 jar of pimento, chopped
3 cups white sauce
1 pound cheese (Monterey jack, cheddar) grated
6 large potatoes, boiled, cubed, or, 1 per person
2 t. Worchestershire
Hot Sauce to taste
Salt and Pepper to taste

In large skillet, saute bacon until crispish. Set aside. In bacon drippings saute onion and pepper. Set aside. Boil potatoes, cubed and seasoned with salt and pepper. In large skillet, make white sauce of 3 T. butter, 3 T. flour and 2 c. milk. Boil down until thickened. Add worchestershire, and hot sauce. Add grated cheese. Season to taste. Add bacon, onion, pepper and pimento into sauce. Adjust seasonings or add cheese, if desired. Gently fold in potato cubes until covered. Turn completed mixture into large casserole pan. The potatoes can be made ahead to this point and refrigerated. Bake potatoes in 350 degree oven until bubbling, about 60 mins.

If you use more than six potatoes, you need to adjust the white sauce accordingly. The most I have ever made is for 20 persons. Use the biggest skillets you have for this.
