5 T. unsalted butter, softened
4 bananas, peeled, halved crosswise and then halved lengthwise
1/3 c. sugar
1 c. orange juice (fresh)
1/4 c. white rum
2 oranges, peeled and segmented for serving
2 pints vanilla ice cream

Directions:
Directions:
Preheat oven to 425º. Grease a 9x13 baking dish with 1 T. butter and place the bananas, cut side down, in the baking dish.

Place the sugar and about 1 T. of water in a small saucepan over medium heat. Cook the sugar, swirling it as it melts, until it is dark amber, about 5 minutes. Carefully add the orange juice. Reduce the heat to low, add the remaining 4 T. of butter and the rum, swirl to incorporate, and then pour the caramel over the bananas.

Bake the bananas for 15 minutes, basting with the caramel sauce every 5 minutes. Serve the bananas in shallow bowls drizzled with caramel sauce and topped with a few orange segments and a scoop of vanilla ice cream.
