1 can black-eyed peas, drained and rinsed
1 can black beans, drained and rinsed
1 can shoepeg corn
1 can Rotel Mexican tomatoes
1 can black olives (optional)
1-3 jalapenos (optional)
1/2 -1 bunch green onions
2 cloves garlic
1/2 -1 bunch cilantro
Salsa (optional)

Dressing:
1 pkg. Good Seasoning brand Italian dressing seasoning
1/4 c. olive oil
1/4 c. apple cider vinegar

Directions:
Directions:
Drain and rinse peas and beans. Drain corn. Mix ingredients. Mix dressing and pour over and stir.
Add salsa for extra thickness and taste.

Serve with tortilla chips or as topping with fajitas, tacos etc. Also great over eggs.
