1 1/2 c small white beans
1 or more meaty bones
2 qt. cold water
1 1/2 tsp salt or garlic salt
1/4 tsp pepper
1/4 tsp thyme
1/4 tsp marjoram
1/2 bay leaf
1 c chopped onion
1 c chopped celery
1 carrot chopped

Any variety of dried beans will work in this savory and money saving soup. Cover the beans with water and soak overnight. Bones left over from any roast can be used. Or choose bony pieces at the meat counter, a short rib of beef, a lamb shank sawed in pieces, chicken or turkey wings or necks, a beef bone, or ham hock.

Put bone into large kettle. Add cold water, heat to boiling, and skim before adding soaked beans, herbs and seasonings. Cover and boil gently two hours or until beans are very tender. Take out bone, remove meat. Cut up and add to soup along with vegetables. Cook 30 to 40 minutes longer. Canned broth or canned tomatoes may be added.
