1 c. bread flour
1/4 tsp. salt
7/8 c. milk
2 eggs
1 tbsp. melted butter

Directions:
Directions:
Mix salt & flour. Beat eggs until light; add milk & butter; add slowly to flour, stirring until well blended. Beat for 2 mins. with egg beater or 1 min. with electric beater. Do not over beat. Mix should be of the thickness of heavy cream. Butter custard cups or hissing-hot iron gem pans & fill 1/3 full.
Bake 15 to 20 Mins.@ 450 º Reduce heat to 350º
bake 15 to 20 mins. longer.Remove immediately
