1 - 2 packages of ready-to-serve tortellini
(or bow tie pasta), cooked
1 - 14 oz. can artichoke hearts (water packed), drained and chopped
1 tomato, chopped
1/2 - 1 c. crumbled feta cheese
1/2 c. sliced black olives
2 green onions, chopped
1/2. c. fresh parsley, chopped

1 T. white wine vinegar
1 tsp. Dijon mustard
1 clove garlic, minced
1 1/2 tsp. dried Italian seasoning
4 T. olive oil

Mix all together and add dressing. Cover and refrigerate.

The pasta does absorb all of the dressing so you may want to add more if it gets too dry.
