1 roll crescent rolls
1/2 lb. bacon, cooked & crumbled
1/2 lb. sausage, cooked & diced
1 4oz can diced chiles
1 package roasted potatoes, cooked
1 C shredded cheese
cinnamon sugar

Ahead of time, fry bacon, sausage, and cook the potatoes. For an easy breakfast, cook these the night before. In a 8x8 greased baking dish, layer 4 of the crescent rolls. Top with potatoes, bacon, sausage, and chiles. Scramble eggs and add to the dish on top of other ingredients. Bake at 400 degrees for 25-30 minutes. During last few minutes of baking, top with cheese.

With remaining crescent rolls, liberally sprinkle cinnamon sugar before rolling up. Sprinkle rolled crescent roll with more cinnamon sugar. Place on baking dish and bake for 12-15 minutes. Can bake at same time as breakfast casserole. A twist to these roll ups are the Carmel Apple roll-ups.

I stole this idea from Trisha's Brunch Pizza Squares. We decided to embellish the ingredients a bit and make a fluffier dish by cutting the pan size in half and increasing the cooking time.
