2 lbs cooked potatoes (can use frozen hashbrowns)
1/2 cup chopped onion
2 cups grated cheddar cheese
2 cups sour cream
1 tsp salt
1 tsp pepper
1 can cream of chicken soup
2 cups crushed corn flakes
1/2 cup melted butter

Directions:

Preheat oven to 350 degrees

Combine all ingredients except corn flakes and butter. Combine corn flakes and butter. Place potatoes in casserole dish, top with corn flakes and bake for 45 minutes.

In our family, these were known as Funeral Potatoes. A perfect dish to take to a potluck or to a family for a post-funeral dinner.
