2 lbs beef top round cut into 3/4" cubes
1/2 t. salt, 1/2 t. pepper
2 T. olive oil
4 c. low sodium beef broth
1 c. water
1 envelope dried Lipton onion soup
1 t. dried thyme, 1 bay leaf
1/2 c. quick cooking barley
2 c. chopped onions
1 c. chopped carrots
1 c. chopped celery

Directions:
Directions:
Sprinkle the beef with salt and pepper; heat olive oil in a 5 qt dutch oven and brown the beef for about 5 minutes.
Add all remaining ingredients, stir well, and allow to simmer for 30 to 40 minutes on medium heat. Taste and add a bit more salt if needed.
