28 oz can sliced peaches
1 c peach juice
1 small box lemon jello
2/3 c cottage cheese
1/2 c pecans
1/2 c heavy cream
Directions:
Directions:
Drain peaches, reserving 1 cup of the juice. Heat the juice to boiling, remove from heat and stir in the lemon jello. Dissolve the jello by stirring well. Cool. Cream cottage cheese with a hand mixer. Stir cottage cheese together with peaches, pecans and jello mixture. Whip the cream to medium consistency. Add cream to the jello mixture. Pour into six 1 cup dishes and chill. Serve with additional whipped cream if desired.
