8 chicken pieces
salt water
2 tsp Italian seasoning
1 tsp onion powder
1 tsp garlic powder
1/4 tsp pepper
1 tsp salt
1 c flour
fat to fry

Directions:
Directions:
Soak chicken in salt water. Use 1 teaspoon of salt per pint of water. Use enough water to cover chicken. Brine for 2 - 4 hours in salt water. Crush the Italian seasoning, then combine onion and garlic powder, salt, pepper and flour. Lift chicken pieces out of salt water, one at a time, and while dripping wet, turn in the flour mixture. Brown quickly in hot oil. Turn once to brown both sides. Place chicken in a single layer in a shallow pan. Bake uncovered at 325º for 45 minutes to 1 hour. Cook until chicken is golden brown and cooked through.
