2 c. potatoes, peeled, diced small
1 c. chopped celery
1 c. chopped onion
1 c. chopped carrot
2 cans chicken broth
2 c. diced ham
2 c. shredded cheddar cheese
1/2 c. butter
3/4 c. flour
4 c. non-fat milk

Directions:
Directions:
Combine vegetables and chicken broth in large soup pot or dutch oven. Simmer 20 min. or until tender when pierced with a fork.
In a seperate large saucepan melt butter then add flour stirring constantly with whisk over medium heat for 1 min. Slowly add milk and stir until thickened. Add to cooked vegetables. Add ham. Cook and stir constantly until just boiling. Turn off heat and add cheese, stirring until melted.
