2 slices bacon, chopped
2 tbsp canned chopped green chilies
2 14oz fat free chicken broth
1/2 tsp. salt
1 c. quick cooking grits
2 large tomatoes, peeled and chopped
1 c. shredded cheddar cheese

Directions:
Directions:
Cook bacon in large heavy pot until crisp. Gradually add broth and salt and bring to a boil. Stir grits in slowly. Add tomatoes and chilies and return to a boil. Reduce heat and simmer for 15-20 minutes (or whatever the box suggests). Stir in cheese and let stand until the cheese melts.
