2 lbs. chicken breast tenders
1 c. salad dressing (either honey dijon or Italian)
2 c. bread crumbs
1 c. pecans, finely chopped
1 1/2 tsp. salt
1 tsp. freshly ground black pepper
1/2 tsp. cayenne
1/2 tsp. garlic powder
2 tsp. spices (either Herbes de Provence or Italian seasoning)

Preheat oven to 375º. Put salad dressing in one bowl. Mix all dry ingredients, including pecans and crumbs, in another bowl. Dredge chicken tenders in salad dressing. Remove excess, then dredge in crumb mixture. Bake on parchment-lined baking sheets for approximately 20-25 minutes or until juices run clear.

I experiment with the ingredients, and so far, I haven't messed these up. Everyone seems to love them, though they are best served right out of the oven when they're still crispy. I serve with homemade honey mustard sauce.
