2 eggs
1 c milk
1 tsp salt
1 Tbsp sugar
1 tsp baking powder
1 1/2 c flour

Directions:
Directions:
Beat eggs and milk. Sift together the flour, sugar, salt and baking powder then mix into eggs. Beat well. Heat a skillet with a generous amount of lard, so the bottom is well covered. Pour in the batter. Allow to set for a minute or two, like you would an omelet. Then begin lifting and stirring batter. Lower the heat so that it does not burn and cut batter into small bits until crumbly in texture. Serve with sorghum or syrup. Fruit is good with these, if you have any.
This recipe was known by many names: the Swiss and Germans call it 'DUMMIES', 'DOTCH', or 'PFENGALIE', Bohemians called it 'SCHMLSA' and in England is was referred to as 'BUMBLEBEES' or 'STIRRUM'. I thought this was an interesting addition to the cookbook!
