3 Tbsp butter
3 Tbsp flour
salt and pepper
1 c milk
8 oz Velveeta© cheese
2 lbs potatoes
onion

Directions:
Directions:
Pre-heat oven to 350º. Peel and thinly slice potatoes and onion. Spray a 9 x 13" pan with Pam©. Layer potatoes and onions in pan, sprinkling with salt and pepper as you layer. In a small saucepan over medium heat, melt butter. Add flour and stir until the butter and flour, are well combined. Pour in milk, stirring constantly as it thickens. When thickened, stir in cube Velveeta©. Stir until melted. Pour cheese sauce over potatoes and onions. Cover pan with foil. Bake for 45 minutes to an hour, or until potatoes are tender.
